A Paleo Birthday

A couple of weeks ago, one of my friends had a birthday. And she just happens to eat Paleo, so I decided to make her these paleo cupcakes.

Taking my cue from one of my favorite blogs, instead of posting the top recipes of the year, I’m going to highlight in this post a few of the things that have most inspired me this year. Pumpkin Season

It’s fall!!
The other day, I was driving behind a big truck filled with hay bales, and I got ridiculously excited for fall–the season of harvest, pumpkins, planting bulbs, changing leaves, apple cider and warm soups!
Believe it or not, sometimes I have to remind myself to look up and watch the changing of the leaves….don’t miss this season. It is my favorite time of year, but I’ve been so busy and stressed with life, that sometimes I forget to lift my eyes and breathe in the cool air and just enjoy the moment. Yesterday, I picked up a large orange leaf and carried it with me in the car all day, just to remind me to enjoy this season…

Bento Boxes and Snacks

My latest curiosity has been “bento boxes.” This idea of bentos pops up frequently in a lot of the blogs I look at. One of my friends calls them “grownup Lunchables.” 🙂

Butternut, Carrot, & Apple Soup

Who says you can’t have soup in the summertime?

Well, I used to, until my mom made this once when I went to their house. Even though it’s hot outside, this soup is still too good to be confined to just the wintertime. Besides, it’s actually good cold as well, so give it a try!
