imageI recently returned from a trip to China with Show Hope, an agency that gives adoption grants to eligible families waiting to adopt (see more in this previous post). Show Hope also funds several special care centers in China. While there, I stayed in Luoyang, at Mariaโ€™s Big House of Hope.

This summer I get the opportunity to go to China!! I am so excited about this trip! I will be going with Show Hope, a ministry that was started by Christian music artist Steven Curtis Chapman, and his wife Mary Beth. Show Hope enables adoption grants to be funded for couples who are waiting to bring adoptive children from around the world into their forever families. Chocolate Peanut Butter Oatmeal Balls

chocolate oat balls**Update 12/4/13: I have reduced the amount of palm sugar in this recipe from 1/2 c. to 1/3 c., and I like it even better!

In a desperate attempt for 1) a good on-the-road snack, and 2) something to fix the “need-chocolate-now” moments…I made these no-bake oat balls. Bear in mind this is a slightly rough estimate, as I did not measure most of the ingredients very exactly ๐Ÿ™‚ Continue reading
