Pumpkin Spice Cookies

Pumpkin Spice everything!

Okay, confession…this is the first Pumpkin anything I’ve made so far this season. 🙂pumpkin-spice-cookies

Pumpkin Spice Cookies
These cookies are adapted from Marla Meridith’s Sweet Potato Anytime Cookies.

2 c. (8oz) oat flour
1/2 c. (3oz) sugar
1 t. baking soda
1 t. psyllium husk powder
1/2 t. salt
1 t. ground cinnamon
1/4 t. nutmeg
1/4 t. allspice
1/4 t. ground ginger
3/4 c. (10 oz) pumpkin puree
1/2 c. (5oz) coconut oil, melted
3/4 c. (6oz) unsweetened almond milk, or 5 oz. water

Mix dry ingredients in large bowl. Add pumpkin and other wet ingredients, and mix well, whisking out any lumps. Using canned pumpkin will make these cookies smoother than the sweet potato cookies, and not as lumpy.

Drop by heaping spoonfuls onto greased baking sheet. Bake at 350 degrees F for 20 minutes, or until golden brown.

Makes 18-24 cookies.
