Granola for Me :)

imageI decided this morning that I had to post this, because pouring a bowl of this granola with almond milk to make cereal for breakfast made me feel so “normal”…is that bad??

Anyway, this granola is an adaptation of this Vanilla Almond Granola from Against All Grain. I found that even though the extra ingredients, like the slivered almonds and coconut, made the original recipe yummy, since I am on a budget, I decided to make the granola with just oats to cut down on the cost a little…because I missed my granola! Also (cheater alert!), I am able to eat regular quick oats, and so did not make these with certified GF oats (which I know can get expensive as well). However, even with GF oats, I think this version may be one that can satisfy your craving for granola without putting too much strain on your budget!

Here’s my adapted version:

2 1/2 c oats

2 T coconut palm sugar

1 T cinnamon

1/4 t salt

2 T coconut oil, melted

3 T honey

2 t vanilla

Stir together dry ingredients in a large bowl. Add wet ingredients and stir well till combined. Spread on baking sheet lined with parchment paper or aluminum foil. Bake 250 degrees F for about 40 minutes, stirring every ten minutes, until golden. Remove from oven, stir in 1/2 c raisins (optional), and let cool completely. Store in airtight container.
