In a desperate attempt for 1) a good on-the-road snack, and 2) something to fix the “need-chocolate-now” moments…I made these no-bake oat balls. Bear in mind this is a slightly rough estimate, as I did not measure most of the ingredients very exactly 🙂
1 c. gluten free rolled oats
2 T. unsweetened cocoa powder
1/3 c. coconut palm sugar
1/2 c. natural creamy peanut butter
1/2 c. coconut oil
1/2 t. vanilla
Combine all ingredients very well. Roll into 1-1 1/2″ balls and refrigerate.
Makes about 12-14 snack balls.
