But it was totally worth it.
We went to visit a friend we haven’t seen since college. She’s been halfway across the world for the last two years, though we’ve stayed in touch through Facebook, Skype, and notes. Her parents invited us to stay with them, and we spent our time sleeping in, shopping, meeting new people, and of course, just hanging out, talking, and catching up on each others’ lives. It was great.
And in the midst of it all, knowing that I was gluten-free, they made some amazing gluten-free meals: grilled seasoned tilapia, roasted potatoes, green beans, grilled cheese and turkey sandwiches on GF bread (with fresh tomatoes and spinach), veggie omelets and turkey bacon, and even gluten free chocolate chip cookies 🙂
It was a memorable trip for all of us, I think.
Whether you are on the road or not this holiday season, maybe seeing family or friends, it might be useful to have some go-to recipes for “travel food.” I also use a lot of these for snacks at my work, as I am driving often for my job. Even during the holidays, you can have snack food that is healthy!
